Randy, the weekdays, specifically Monday through Thursday are definitely less crowded than weekends. I haven't really seen that the mix of people is really any differant, wether they are local or from places further out. Also on any given weekday you could find anything from just a few folks to as much as 20 to 30 on some days. If your seeking queiter times then Monday thru Thursday are your best bet.
