Hello Rob, I see we have similiar ways of thinking about things. It seems to me, from what you have written, that you would not have a specific, or finite explanation, of what any possible " ultimate truth " is. Also you question whether we as entities, with the inherent biases of our individual thought process, could even necesarily discern any ultimate truth. Regarding that last point, it seems to me, that we appear to be intrinsically tied to the manifiestations that our biology produce in us as behaviors, like thought. So if " truth " is not available to thought, then we won't find it. Some people in the past, " thought " the earth was flat, and were very sure of themselves, while now, most would agree, it is shaped otherwise. It seems to me, that when digging deeper into the structure and relationships that " this " universe shows us, that, " what is " will transform itself, as the layers of this " onion " of understanding, are peeled away.
